Gwamp-You are correct about the method of just replacing the head.
However, I don't recommend that approach either.
To do so, you create a seam between the artificial head and the natural body of the fish. Due to the fish body being natural and the head being artificial, there will be different aging properties over time. Not to mention the epoxy or other filler that must be used to fill the seam. It is very likely that the seam will crack or otherwise degrade over time. I say it's just not worth it in the long run for a lasting mount that cost a pretty penny. Go with the full reproduction.
