You cannot necessarily train a dog to point. Pointing is a internal ability that certain breeds have right out of the box. If you have a Lab that you see flash point birds, then you can hone that trait but there are few 'Pointing Labs'. You would be better teaching your Lab to Quarter, and Sit to Flush.
Years ago I noticed that my Lab was flash pointing woodcock, so I would command him to 'stay' (a command that he already knew) when I would see him flash point. This worked out extremely well and he pointed and held woodcock on his own until he passed away years later. I have had many other Labs but none had this trait, so I use them as flushing dogs.
Many Labs are used to hunt upland birds with great success. Talk with a reputable trainer about teaching and training for UKC Upland Hunter titles. Don't be scared to take a Lab that has moderate control afield to try on Woodcock and Quail, just be ready to hunt flushing birds.
You can also try getting a new dog from kennels that have bread Labs specifically for pointing traits. Try the 'American Pointing Lab Association'.
