First it depends on what size boat you are fishing out of. If you are fishing out of a alum. boat, you can almost fish anywhere. If you are fishing out of a bay style boat, you need to use more caution. I would suggest idling in areas you are not familiar with until you learn where you can run.
General I fish the to the north if the fall/winter. You can fish the canals around the old sulphur mine and in the mine itself. Fish cuts and points off of these canals. Plastics, fresh shrimp and live minnows work best. To the South, fish the cuts, dams and oyster reefs along the main bayou, the ponds and in Lake Chien, Falicity, Barre and Tambour. Plastics work well in these areas along with Gold spoons. Alot of oyster reefs area marked by PVC pipes are poles around them. However, the unmarked ones are usually not pressured as much. Also, in the lakes, look for birds diving. A lot of times the specks are under them. In the ponds fish cuts, points and grasslines for reds. Also look for hard bottom areas as they seem to hold more fish.
Hope this helps you out.
