After returning from our deer hunting trip from Sonora, Texas, I began deboning deer meat an processing my own sausage and ground meat. At the end of processing, I like to make links without casing and bake it for 40 minutes in the oven. I run my 1hp grinder and let the sausage without casing fall onto my hand, about one hand length. My grinder is set up with a foot petal an easy to stop and start. We make around 6 to 7 dozen at one time. After the sausage cooks, I let them rest and cool before I bag them. Our favorite seasonings is the breakfast and greenonion mix.
