We eat some and trade for crawfish with a local fisherman. That way nothing goes to waste. we eat all the saltwater fish we shoot. All the gar are good to eat, just hard to clean, if you don't have any experence. I use to fish them commercially and they can bring some Ben franklin's to the wallet, if you know what I mean!!

How do you cook your gar?
I keep the ones I catch while perch fishing and I just make fish pattys out of them. I broil them sometimes too. Any recipes?
Thanks

I usually stuff with garlic, onions, and peppers then brown it on the stove. Let it cook until tender, about 1.5 hour depending on size. Serve over rice with a vegatable on the side. Also it is pretty good bbq'ed.

We do a lot of bow fishing and giging here in central La. That is some nice fish. Gar is the best eating fresh water fish. Fryed, gravy, and BBQ'ed. Just got to let a real coonass cook it. Anyone who tries it will love it

I doubt this will stop anyone from eating them around here but it as been proven that garfish has some of the highest levels of mercury. Of course because it’s a predator fish and the big ones are so old. I can’t name the source because I don’t remember the book it was in. It also said that chou-pic had high levels of mercury. Im not trying to stop anyone, just relaying info. I know how some people on here get.

Great aunt in Mississippi/Yahoo River area use to combine or grind gar meat with onions, black and red pepper, potatoes and eggs and roll it all up into small balls and deep fry. Haven't had that in 30 years but I thought I'd mention it. LOL..
