What to do with birds after the hunt-enjoy them

Duck breast marinade- Cajunsim’s LA home made

Homemade blackberry port wine
Homemade strawberry fig preserve
Bayou rum tangerine
Fresh tangerine off tree
Honey
Raw cane sugar
Garlic
Chacheres
Balsamic vinegar

Brine duck overnight, rinse, dry and add to above mix to marinade 30-60 min. Cook breasts on hot black iron skillet for 2-4 min a side (if skin on deboned bird cook skin side down a little longer before flip)
Place breasts on platter/pot.

Deglaze with wine or rum and remaining marinade then drizzle on breasts.

Find a pillow and quiet place to take a nap after ūüėĀ

Sounds like awesome recipe!!One of these days Wifey and I gonna pen a Wild Game Cook Book as she grew up in Mandeville,living off the land,literally,and they ate wild game quite often and her mom gave her some of her ole-time recipes for things like wild hog,squirrel stew,and she and I came up with some incredible recipes for wild duck(try to shy away from scaup and spoonbills)and we have deep-fried duck and also she uses a Cajun Injector to inject some ducks with a nice concoction of satsuma juice,Abita Amber beer,various seasonings and she sometimes stuffs the body cavity with either a sweet potatoe or wild rice and sometimes puts a whole satsuma,peeled of course,into the body cavity.Can't wait for East Zone Opener to hopefully harvest some fat greys and fine teal and possibly a wood duck or two,filet mignon,and we sometimes shoot canvasbacks,another filet mignon!!

Mandevillian that injection sounds good. I just did a turkey with a butter Cajun seasoning from a known la company and mentioned this would be good in a duck breast. May even try them marinade I did in an injection. Season has been very blessed so far and will be cooking some of the harvest throughout the season trying new recipes.
