Freezing Speckle trout

What is the best way to freeze Speckle Trout? I freeze my trout in water but when I fry them after a few months they don't taste good. I now only eat them fresh.

I put a few drops of lemon juice in the bag when I freeze mine

I vacuum seal all fish now and it works great for me. It takes up way less freezer space too.

Vacuum seal is the only way to go if you want your fish to keep. Small cost to pay for great fish every time you open the bag. I would recommend purchasing pre-cut bags. They are a little more expensive but it saves you lots of time. Fish keep great for months.

Dad taught me a few things about keeping his trout tasting like trout. When you clean the trout, put some of the ice water slurry from the cooler in the pan, clean the fish, rinse then put in the ice water pan. When bagging don?t overfill with filets, add a little of that water in the bag then vacuum seal, date and rotate. Does the trick for me and I try not to let sit more than couple of months in freezer.
