ONE OF MY FRIENDS CALL ME ,HE WAS FISHING CATFISH OFF THE BANK AND CAUGHT A 20# SOFTSHELL TURTLE AND CALLED ME TO COME AND GET IT.CK. IT OUT!

When & where is supper?????? I usually catch a couple a year on my trot lines, but haven't seen one yet this year.

Now that's good eating right there. Hadn't caught one since I was young, used to pickfork them when the irrigation canals were let loose.

Those were the days.

Yep, that is some fine eating. Cook it loooooooooowwwwwwww and ssssssssssllllllllooooooooowwwwwwwwww!!!! Man doesn't really know what he's missing until he eats one. Hint, it's why they get at least $10 a pound for the meat.

Key: Add about 2 beers to the sauce and drink the rest of the 12 pack while cooking.

Those softshell ones are good fried also.

I had 2 on the trotline last week and I just threw em back. I had heard they were good but not the way you guys are talking about them!
How big do they need to be, 7 inches across is to small? The ones I had on the lines were about 12-14 inches across, is that a keeper?

Charley, the seven incher was probably too small, the 12-14's would have been in the pot.

Killadaux, Martinez Seafood in St. Amant 225-647-0488 sells turtle meat.

Ruger, I've never tried it fried, but it sounds good to me.

On the way back from catfishing this morn.I spoted a snaping turtle crossing the road,after stoping to check him or her out,I let him walk, he was a little to small,this is the time of the year they move around a lot to go and lay.If you keep your eyes peeled,you can usually find a nice mess of turtle sauce picante walking the roads!

Alligator Sauce Piquant

4 lb Cubed Alligator Meat (can sub turtle meat)
1/2 cup Chopped Celery
1 cup Flour
1/2 cup Chopped Bell Pepper
1 cup Oil One
4 tbs Butter
1 cup Water 2
Medium Chopped Onions
1/2 tsp Sugar
1/4 cup Chopped Parsley
1 Can Tomato Paste
1/4 cup Chopped Scallions
To Taste Salt & Cayenne Pepper & Louisiana Hot Sauce ***

Soak meat with hot sauce and lemon juice for 30 minutes prior to cooking. Rinse before cooking. Make roux with 1 cup oil and 1 cup flour and cook until golden. Sauté onions in roux until brown. Add tomato paste and sugar and cook about 5 minutes. Add bell pepper, celery, garlic, and stir well. Add water and cook 1 hour over low heat. Add scallions, parsley, alligator (cut in small pieces, and preferably meat other than from the tail) salt, pepper and cayenne to taste. Cover pot and cook slowly for 30 minutes or until meat is tender. Serve over cooked rice Enjoy.
Yield: 10 Servings

Will cook it a lot longer than 30 minutes to tender. More like four hours. Make that stuff fall off the bones. Also gives you more time to drink.

Is it ok to eat red ear water turtles. I mean, is it against the law? If not, what is too small? I see 5-10 lb. turtles all the time in my yard in spring.

they are legal,and they are good,they don't have as much meat as a snapper or softshell,as far as size,whatever you feel like cleaning,once you clean one and see how much meat you get than you will know what size to clean,I've cleaned and eaten many of those.

TBOY, we'd fry only the softshell turtles meat, not the snappers or anything else. That softshell has a lot of meat on him (front legs have as much as the back)and is fairly easy to clean. They are the best.

As far as red ears, one time my dad's friend showed up with 40 that he had trapped from his fish pond and we cleaned them. Didn't give the meat of 10 snappers. The meat was OK though

Now the snappers, they are some mean dudes right there and lightning fast. ALWAYS cut/break the hinge of the jaw even if you cut his head off to prevent him from clapping down on something.
