Additions to boil

Reply
just curious, what other additions (proteins) do you add to crawfish, shrimp and crab boils. I know everyone adds sausage to the boils but anything else? I have added a pork loin to the water and it came out great. Anyone tried catfish filets?

I've never tried it personally, but it think catfish filets would fall apart in a boil. A few things I've tried as far as proteins is Mickey Browns Hot Tamale's, Hot Dogs,Deer Sausage, Whole Chickens,Eggs, Cocktail Weenies, and Oysters in the shell. They all came out good. Good Luck!

We have put live oysters into the boil water after crawfish and shrimp, brought water back to a boil and turned it off. THe oysters crack open a bit and get some real good flavor. Since they are in the boil the texture is almost the same as raw. I ate ham that was done after crawfish. They left it in the water about 2 hours ater bringing it back to a boil. It was very good too. We have also put fish fillets in the water wrapped up in cheese cloth.

By all means don't forget to add Smoked Ham Hocks to your boil.

At times we have had Smoked Ham Hocks, corn and potatoes and garlic. Boil those with crab boil and sit back with a few beers and enjoy yourself

Get a canned ham and punch holes in the can and throw it in the boil. Great sliced ham for sammies.
Boil some eggs and peel. throw them in the boil while soaking the crawfish. great for crawfish potatoe salad.
Weirdest thing i ever saw in a crawfish boil was TURNIPS
They were boiled w/ the crafish traters and corn.
She took em out the boil and mashed em . made like mashed taters w/ lots of butter and salt / pepper. Great stuff

I do not like greasy, slimy seafood. So, I never add meat to the pot while my seafood is in the pot. But, I do love meats boiled in seafood-boil.

It is very easy to boil any meats after the crawfish, crabs or shrimp are done.

Sheepshead, black drum etc. wrapped in a cheese cloth, added to the pot at the moment you turn off the fire, makes the best fish cakes!

Red and yellow bell peppers are fully ripe at these colors and taste fantastic when added to the soak.

Peanuts take a while to boil. I let them soak for at least an hour. They are my favorite non-meat in a boil. I usually boil six or seven pounds, refrigerate them and snack for days afterward.

Mussels are kinda cheap. Into a bowl, I melt some butter, add a little of the boil water, then add some mashed garlic from the boil . Then, I swish the steamed and slightly open mussels thru this mixture. This is some good stuff! Get crazy with the boiled garlic!! Dipping some hot french bread into this mixture ain't bad either.

like bigoledude mentioned adding meat to the boil turns whats in it to a different flavor and taste so be aware.

non fatty meats are ok like hot dogs and such but anything with fatty content in the meat is best to be cooked seperately or after the seafood is out.

as to what goes good in crab boil seasoning, hell ... everything, if you eat it then it tastes good in crab boil lol.

strange as it sounds even steaks are good boiled in crab boil (but they can be a little tough depending on the quality of meat so lesser quality of meats should be cubed like stew meats

Well not so much for just eating there on the spot, but as someone else mentioned, filet some sheepshead or drum. Place about 2 lbs of fillets in cheese cloth - tie so it doesn't come out and place a few of these fish packages into the crawfish boil water. Bring to a full boil and let sit about 5-6 minutes then fish them out of the water to cool. This (fish meat) can now be used in any regular crabmeat mix to make stuffed crabs or rolled into balls and coated with flour with a light fry to brown them off and they taste just like crab meat with that crawfish flavored water.
Some people have made the statement that many resturants do this to substitute for expensive crab meat in their stuffed crabs served.

After the boil, I like to add a little more seasoning and throw in a couple of pounds of turkey necks. A few hours after the crawfish are gone and the sudden hunger hits you, beer and spicy turkey necks are awesome. They actually have a good bit of meat on them.

Caught a large Buffalo fish and after the boil was over added it to re boiled water until cooked.

First cut the head off and gutted it (need an ax for the head cutting). Butterflied it out and did not remove the scales then added it to the boiling water. After cooked placed on the table scales down and everyone ate the tender ribs. No one ate the crawfish until the buffalo was gone.
