fishy lemonfish

Cooked lemon fish on grill for second time and it tased fishy. I can't believe this is right since I hear so much raving over this fish. The fish I cooked was a 46 pounder. I know she was fat and full of eggs. I cooked it on a gas grill with a little lemon pepper seasoning only. Shoud this fish be bled or something? Maybe marinated? Any help please since I've got quite a few steaks cut and wrapped in freezer.

Keep fish iced down good.
IMO....if it taste "fishy", most likely it is because when the fish was caught....it was not kept cold enough on ice. Just having "some" ice in the ice chest may not be good enough to keep the fish fresh. You need lots of ice.

All seafood must be kept alive or kept cold right away...not a few hours later.

In your case.....marinating or putting lemon juce may help to improve the taste.

My favorite is snapper but lemon fish is right there with it.Put a few spoonfulls of butter in a bowl with lemon juice and Tonys then melt it in microwave.Slice some lemons and onions and put on top of fish in a pan.Pour the marinade over the fish and let it sit for an hour or so.Make sure you melted enough to almost cover fish.Put some aluminum foil on the grill and fold the edges up so the juices stay in,then add fish and pour marinade in with it.Thirty minutes and its done!

fishy taste ?
Lemon fish is great eating, but it really helps when ALL the red blood line meat is trimmed off. Even a small sliver will cause some fishy taste. Also, don't over cook it.

Bleed it out!!
When you catch a ling(lemon fish) cut the tail off and let it bleed out!! This will get rid of the blood line and any fishy taste!!

Bloodline?
Split the sides down the midline then remove all of the bloodline. That should help. To me any frozen fish gets fishy because when it freezes it displaces the natural oils in the fish. Your better splitting your catch with your buddys freinds and family enjoy it fresh its much better that way.

Lemon Fish
We have never had to bleed lemon fish and I have been out on guided charters as well as private boats. I always be sure to cut out all of the blood line in the fish but I do that to all fish, and I never have an overly fishy taste even after freezing them. As others have posted you have to keep a lot of ice on the fish when they are caught and when you clean them. I always have a big tub filled with ice and water that I put my filets in once they have been throughly cleaned and trimmed. I freeze them in freezer bags with water and never have a problem.

I've never had good lemon fish and I don't see what the hype is all about.
