Who Makes the Best Deer Sausage?

Smoked- DD in Bogalousa is tough to beat if you want to trick the wife and other guest.

Mike Tramonte does good work in Baton Rouge. Last I had him make a batch it was out the back of Ramers grocery. Ust to only do link sausage. He now has a full blown operation and visits this site pretty regular.

I hear good things about Bergerons just off the Lobdell exit across the river from BR.

I had one batch done in Natchez and friend raved about this guy and I gave it all away. It was smoked so long it looked like breakfast sausage. It was all dry. Seasoning was terrible.

I like a good Green onion and Jalapino mix about 50/50 deer to pork.

What about Boudin????/

Bourgeois Meat Market
Bourgeois is in Thibodaux. I find they are the best around for sausage and deer burgers. And their prices are not bad either.

Mike opened a specialty meat place on Baton Rouge. He used to work out of the back of Ramers Grocery. His new place is on Jefferson Highway between Stumberg Lane and Airline Highway, just down the street from Parkview Baptist. He has been doing my deer for years and makes the best sausage at great prices. I get compliments all the time about how good the sausage is when I cook it.

For smoked I would have to agree with southnboy, DD in Bogalusa has been the best I have tried. For link sausage I have used Pete Giovenco in St Rose for the past few years and I find him hard to beat. I've tried his mild, italian and cajun sausage blends mixed 50/50 deer to pork and they have been great. I lost all I had left from last year and am looking forward to bringing him another deer or two soon.

Check Out Van's Deer Processing
Van's Deer Processing in the Jackson Ms. area is fantastic, Van started out in the Back of the family store where U can still get a fine steak cut to order.

He started processing deer way back there in about 1985 or so and he does a great job on everything from summer sausage to smoked to U name it its done there and fantasticly!

They are great to work witha and have great prices U can give um a holler at 601 825 9087 tell um Redneck Adventures sent ya!

Oh Mr. Pete makes some fine stuff 2 yeah!

Smoke Guerin from Grosse Tete is who I use for deer sausage, very good flavor and reasonable prices. As far as the boudin, my vote would have to go to the Best Stop in Scott.

Smiths Country Meat Market
First of all get you a pocket full of rocks cuzz you will throw them at 3 out of the 4 places already mentioned after you have tried Smiths Country Meat Market in Brookhaven Mississippi 601-833-0359. He owns a true smokehouse and trust me NO ONE can tell it is deer it is great. Also he makes the best loose sausage around I don't even hunt this area anymore but I bring all my meat to him after the season it is worth the drive.

We have a new cajun meat place here in Denham. It is called Vigues. His pork sausage is good, so I am going to let him do some deer for me as soon as I get one on the ground. I will post the results.

I second Allen Cortez in Schriever. He is the best I have found. One place NOT to go is Blueberry Farms on the Hwy between Ringgold and Coushatta up in north LA. When I lived up there, everyone told me that was the best so I brought a deer there. Their smoked sausage was so over smoked...it was the driest and smokiest stuff I have ever had. I could not even give it away and had to throw it all away.

Spuddys cajun foods in Vacherie,La for $2.00 a pound he will de-bone, make, and vaccum pack. $1.50 a pound he will throw them in a ice bag and you frezze Yourself. Guys for 2.00 a pound and he de-bones you cant beet that. By the way they taste awsome!

I have eaten DD sausage and it was alright compared to Fortenberry's. I have eaten a lot of sausage and they are best I have ever eaten . You can buy deer sausage from them so you can see for your self 2 years ago we brought 17 hogs and 2 deer to them . Their number is (601)798-2156 or 799-4956 5739 Hwy 43 North Carriere, MS 39426 ps. they raffle off a rifle every year . each deer or hog you bring you are entered in the raffle..

whitetail butcher in Independence does good fresh sausage (italian,cajun, and green onion) , but their smoked sausage is not very good. Cutrer's in Kentwood smoked sausage is very good. I usually just make my own sausage ,but sometimes I don't have the time.

Vines in Centerville MS
Had most of the ones mentioned but I think Vines smoked is the best. People that normally don't like deer sausage like this one. It is great to use in gumbo and red sauces!

Feliciana Seafood on Hwy 61 in St. Francisville! Tip makes the best I've ever had made. They'll mix it how ever you want it , its smoke and then vacuum sealed in 1 pound packages. It is by far the best I've tasted and every pack taste the same!

I agree that Tip has good deer sausage up in St. Francisville at Feliciana Seafood. The only problem is that he sends his deer over to DD's in Bogalusa for processing and then marks it up. I used to send all of my deer to Feliciana and then found out that he was sending it to DD's. I contacted DD's directly and they confirmed what I heard. I now send it directly to DD's and it is much cheaper.

DD's the place for me, they are consistant and the price... about $0.90 lb vacuum packed is hard to beat.

Deer Sasuage
Does anyone know if the recommended sasuage makers use only the meat of your deer or is it all thrown together until a specified poundage is reached and the batch is made?
I take good clean meat,but it quite often is added with other meat.
Someone who makes sasuage from my deer will get my business.

DEER SAUSAGE AND BOUDIN
Best deer sausage is Vines in Centerville Ms. $1.50 a pound vaccumed packed. Best boudin and jerky is Bourgeois Meat market in Thibodaux on the highway to Schriever.

Some places will mix your deer with others, while some keep it separate. If you want to know, you just need to ask the person or business doing it.

I prefer DD
I like their smoke sausage and the way they pack it. It's your meat so that's good to know. Also, they make great ground meat. I have them mix it 70/30 - deer/beef. Cooks Great and may wife likes it also. Prices are more that reasonable.

I use to live about 30 miles from D&D in Mississippi and I must say that their sausage is some of the best I had eaten. There were several places around Hattiesburg, MS, but after taking my meat to D&D, there was no other, you were guaranteed to get "YOUR MEAT", from "YOUR DEER", not many processors will guarantee that. When it's all said and done though, it depends on what tastes you have.

By far the best is Catoir's in French Settlement. I've tried them all and Tommy makes the best with Bergeron's a close second.

Fortenberry's on Highway 43 in Carriere , MS

I make all my own fresh venison sausage at home.

But i get my Smoke Sausage made at Fortenberry's.

Their smoke sausage is the best I have ever had.
