I see some forum talk about smoke houses. I thought I would share the way my friend and I smoke our sausage. I have a few pics of it being put together to give you an idea just never took pics of it complete. We have used this past 5-6 years and can smoke about 200lbs of sausage. What is really good about this is the fact we take it apart and put it in a building to store when not in use. takes 7 sheets of OSB plywood we used 7/16. And 6 2x2x8ft pine or white pine boards.
On the morning we are to smoke we get 3 aluminum throw away pans you get at thanksgiving to hold turkey and fill them with charcoal then light them to get coals going. (tip if you are on concrete do NOT put this direct on concrete it MAY cause explosion....speaking from voice of experience)

Start assembly of smoke house. Put it together with wood screws. Get 2 thermometers one for rear and one for front. My friend had old storm door that we cut in on the front to get in and out but you just need to make an opening that you can get in and out of. The roof we just really lay a sheet of plywood on top and may put a screw or 2 towards the rear of the 'smoke house'. Leaving the front so we can raise and lower one corner to adjust for heat and smoke. We used (3) 1 in dowel rods 8 ft long to hang sausage on we do use a support in the middle of them. You get closet rod hangers at the hardware store that fits the dowel rods put one end on the front and the other in the rear to hang dowel rods.

Once you have it assembled your coals should be ready to go in house spaced out length of house. Get your temp up in house to about 140 deg then start putting sausage on dowels.

put your wood you want to smoke with on the pans of coals shut up the house and watch your temp. We try to get it to about 170 for 1st hour then let it come down to about 160 for 2-3 hours. You may have to add more wood during the cook time. After about 3 hours break off piece in front to see if cooked if so pull pans out if not continue to cook. Once pans are out we spray the sausage down with water to cool it down so it does not cook any more.

This is all we have used for past 5 or 6 years and we still are living today we always have about 150-200lbs of sausage to smoke. We grind and case the sausage Friday night coil it up in ice chest with 1 gal milk jugs full of frozen water. Then smoke it Saturday mornings starting about 8 am and generally finished by 1pm.

A friend of mine told me about Mickey Browns deer burritos and was to let me know when he was going so I could send some deer meat to have burritos made. Well he forgot. I ragged him bad enough to where he gave me some. Damn they were delicious but I thought maybe I can make them myself. Look on internet did not see one recipe that suite me so I put together my own recipe. I find it just as tasty as Mickey Brown's.

Take about 1 ham of deer put in slow cooker with steak seasoning and 2 cans of Campbell soup “beef consome’” cook about 5 hours or until you can separate with fork.
Take meat out shred it with fork and I took a knife and chopped it up to about 1 in long pieces.
In a pan or skillet mix in the following.
15 oz cooked shredded deer meat
1 can of refried bean 16oz
1 can of diced green chili 4 oz
About ¾ cup of juice from cooking meat
1 pack of taco seasoning (add more if desired)
Salt and pepper to taste
Let this simmer 15-20 mins on low heat
Let mixture cool down and spread over tortilla sprinkle with cheese if desired.
I used the large tortillas and got 6 out of this.

These were caught by bayoubuck, my friend and I this past weekend. special note here bayoubuck came in last place....yea that is correct he ran 3rd in a 3 horse race LOL

It appears everyone wants to keep this a secret. This apparently includes me. Lol. Can hardly find any post on lake Sabine so thought I might post what has been caught last 3 weekends. This was 3 weeks ago my brother, Bayoubuck, and I caught. I might add most caught by him. sorry for duplicated pics tried cleaning them up but when I told it to remove pic it showed removed and when I re-added them they were still there. will report it

My brother, his oldest son and I make trip to Sabine caught a few trout and one flounder. One trout 24 in plus caught by my nephew.

Made trip to Sabine Saturday 5/15 caught some nice trout and reds. We ended up with 12 trout and 6 Reds most part all quality size fish 2 specs 24 in plus. 1 red 21 in.

Went to Sabine Lake Saturday caught 1 flounder 1 red 1 sand trout and 8 specs. Specs were19-24 in range with the exception of one just being legal size limit. Had 2 of my sons with me and they lost a lot a fish and 2 of them were for sure over 24 in. Not bad day all in all.

Old Louisiana boy looking for info on Big Lake. Just got into saltwater fishing and have read a lot about Big Lake have fished it one time back in the early 90's. I need info on where to launch and what to be careful of in the Lake. (and tips if you will on where to catch some Specs) The tips are not a must I will one day figure it out but I am not from that area so I do not know where launches are bait etc. Please someone help a brother out here.

Caught these on Sabine River north of Toledo bend. Had about 18 at 3pm but between 3 and 4 caught 32 this is only 1/2 the catch. I was with a friend of mine that took the other 25. One Sac-au-lait in there and it was a nice one. First time I ever went up there and first time I have ever caught a White Bass and the first time I ever ate them. Not bad think I will keep them all. LOL...A 70qt ice chest will not hold 12 pk beer 2 cokes 2 bottles of drinking water 1 sac-au-lait and 50 white bass...we lost one with them flopping in ice chest top flew up and it jumped back in the river....the last 3 we caught had to lay in bottom of boat till we got to landing to put some in another ice chest....Loads of fun.

Hey how bout some of you boys help out guy in Texas that was born and raised in La. I am coming over this weekend to fish with my son and want to go to Belle River or Verret could some of you guys give me direction on which one would be better. Have been coming HOME for past couple of years and fishing has not been that great but I just love the area and want my son to experience it with a lot of action of catching bream and or sacalait. Please give me some help.

i use any kind of fish to make crab meat. Made crab bisque this past weekend with specs and I could have sworn I was sitting at Sammy's Grill in Baton Rouge eating theirs. OOOOH SO GOOD.

Have you looked into this because I have and the consensus is that OSB Leaches at temp of 224* I do not get my smokehouse that high in temp. Plus the more you use it the more it gets seasoned.

I have one and it is a monster meat grinder works better than I thought it would I have ground 45 lbs from start to finish (mix meat add seasoning set up grinder clean grinder and put back up) 2-1/2 hours but acutal grinding of 45 lbs about 5 mins......did 66 lbs with my brother this weekend started grinding at abt 8pm (already had grinder set up and meat mixed.) was through grinding and washing grinder and put up at 905pm total grinding time maybe 10 mins.....only bad thing hard to get #42 plates and hamburger attachment will not fit. Friend of mine has the 1-1/2 hp #32 plate at it is great according to him. If I had it to do over because of the #42 plate stuff I would get the 1-1/2

Yes I have fished it a lot in the past year since I started saltwater fishing I do have La non-resident License and catch La. limits. I always fish Blue buck point and catch fish there. Good days I go to the La lighthouse and jetties and pick up a few. If you want big bull reds go to the Jetties. I have yet to land one but I have hooked them and they either break the line or straighten the hook after several runs. It's a blast. Landed about a 35 in black drum last year at the jetties. Going in the am to Sabine hopefully will catch some. Will advise later. Went to Matagorda couple weeks ago it was ok but I am the same with you on the wade fishing. Best baits I have used on Sabine are Texas trout killer pumpkinseed with white belly chartruese tails and 4 in New Penny gulp shrimp. Just got call from friend of mine reports are Specs are biting good about mid lake.

I had to move to Texas in 1990 to work have hated living here since but at least got a job I still fish and hunt La. a lot I live in a town called Nederland it is between Beaumont and Port Arthur. I will take me about 45mins to 1 hour to get to Big Lake

I just recently purchased Yamaha 90 4 stroke and I was told by the dealer's mechanic to run it on idle under load for 1st 10 mins then run it at 2500 rpm for 10 mins then back to idle for 5 mins then run it at 3500 rpms 10 mins and vary that for the first 2 hrs of run time then I could run it full throttle for not more than 5 mins and ease throttle back to say 5000 rpm then 3000 but not more than 10 mins for first 10 hours and then bring it in. Then the mechanic said also (on the side) better to bring it in closer to 15 hours of run time. It seems kind of weird but I did it the way he told me. They say this is because the motor is actually shaving metal out of the block and if you kept it at wide open speed it would not shave it uniformly. Whether this is true or not I cannot tell you but I followed instructions verbatim and have finished that stage.

Hate to say this about my grandfather who died in 1974 but I will tell the truth now. He and I use to run lines in the Mississippi when the river was high. He told me that was the only time to eat the cats from there if you ran lines south of Baton Rouge. He would sell them as "FRESH AMITE RIVER CATFISH" and people would buy them, eat them and call back for more. We would also eat them and I am still living. So I say as long as the river is high should be ok. As far as taste I could not tell the difference from any other catfish.

I went there Sunday did not hook a fish. Now this was my first time ever there but everyone I talked with had not done any good. Water the color of cafe au lait and I was told crawfish farmers were emptying there ponds.

Water is real high at Toldeo bend there was lots of rain north of it they are having the locks opened up to let the water out it was 2 feet above pool Monday and because of the locks being opened flooding is occurring south of Toledo all the way to Sabine Lake. Fishing may not be the best. Good luck if you go

Hey wish you guys that are tight lipped (but I do not blame you for doing so if I were over there I would probably do the same) would turn loose of some info over there I am stuck in Texas and disliking ever minute of it. Really guys would like to know when the Sacs and bream start in the Verret, spillway (southern end) and Bay Natchez area start turning on so I can bring my boys over and show them how the fishing really is in the GREAT state of Louisiana. Have made few trips over past couple of years and have not done well and I have told them stories of how great the fishing is over in that area. I think they think I am not telling them the truth. I know since Andrew, Katrina and Rita kind of tore up the places but I do believe it will come back. Please some one let me know when it really turns on.

You are sitting in the perfect place in my opinion. I use to live in Dutchtown and fishing was great within 40-50 mins from the house fished the spillway and Verret what is nice about this going down hwy 70 Verret landing at shell beach on the left and landing for spillway on right really nice if not biting in one pull up go to the other. Also fished Spanish Lake but I hear it is a mud flat now but might try the bayou that you would go to get to Spanish Lake may be good fishing in there it is called Alligator Bayou reach it via the ridge road from airline hwy on 73 turn right on the street just past the I-10 go all the way to "T" and turn right then just before you get to I-10 again turn left and landing is on the left. Also Bay Natchez, Pat's bay Grand lake and Belle river all within 40-50 mins from your house.

Cannot remember his name but he was in St. Amant area which is around Gonzales. He did a deer for me back in 1987 and it still looks as good as the day I picked it up. I look at others work and this guy's work is really the best I have ever seen. He raised a buck from a fawn and had it as a pet at his house and in 1987 someone killed it and drug it off in the woods and cut the horns off. All this went on when he had my deer head and he kind of lost interest called me and told me but I told him I wanted him to mount it and if he decided to get out of the business for sure let me know. Few months later he called me and he finished the deer. I highly recommend him sorry cannot remember the name but maybe the story of the deer will help you find him.

I talked with Ian just after they found the deer on his dad's cell phone. I asked him to tell me a deer story. His reply "I aimed, I shot, I killed" LOL I told him he needed to work on his deer stories... Proud of him and my brother keeping hunting tradition going.
