I know all of us have our favorites with red or mangrove snapper, but this has been my favorite.
1.5 lbs snapper fillets (bloodline removed)
Salt and pepper to taste
1/2 cup all purpose flour
1/4 cup olive oil
1/3 cup white wine (anything on hand)
2 cloves garlic
1/4 stick of butter (sliced in 4 or 5 pats)
3 sprigs parsley cut fine
Dry off fish with paper towel, then season with salt and pepper. Dredge fillets in flour, shake off excess. Heat olive oil in skillet on medium heat. Pan-fry fish on each side till lightly browned (about 3 minutes per side). Gently remove fish from skillet. Add garlic and saute' for about one minute. Add wine and squeeze lemon in pan while scraping pan drippings into the sauce. Add butter to pan, and immediately turn off heat. Return fish to pan to reheat and absorb sauce. Shake parsley onto fillets. Plate fish and spoon any remaining sauce onto plated fillets.
I prefer mine with a salad and asparagus on the side. If you want pasta, just double the sauce ingredients and pour remainder over cooked angel hair.
This recipe can be used with any white fish. I like it with Mahi, Grouper, Amberjack, and even Specks.
Now having a proper boat to go after them, I am looking to try my hand at some yellowfin tuna fishing. I know there is a lot of experience in the LA Sportsman community, and I would like to gain as much knowledge as possible to avoid wasting valuable time and money. I will be fishing mostly out of Cocodrie, but may tow to Fourchon at times. My first question is about seasons. When and where is the best time to target these magnificent creatures. I know different seasons may call for different tactics and locations. I would like to just get some basics down before we go 100 miles out for no reason, but if that's where we have to go...so be it.
I have heard about some sunken German U-Boats that are great reefs in the gulf about 60 or so miles south of Cocodrie. Do you know the GPS coordinates of them or other reefs in this area for targeting grouper?
I have been unable to locate a map with depth information for distances due south of Racoon Point off of Isles Dernieres. If I go due south from the Point, how many miles before I reach 50 feet of water, then 75 feet of water. Also, is this area at depths between 50 and 75 feet a 'target rich environment' (rigs)?
I have become comfortable fishing out of Fourchon last Summer, and now (like everyone else),I am having to figure out some other areas to fish. If anyone has information on fishing out of Freshwater City and going offshore, please respond with info on how far due south from the landing to 100' of water? Is there a target rich environment at that depth (ie. rigs)? Is there decent fishing for snapper, lemonfish, amberjack, dolphin in this area, and how far do I have to go distance from launch to get to them? I am limited to fishing range due to fuel capacity, which is why I am so stringent in picking launch location in proximity to fishing grounds. Any other suggestions for this general launch area (Freshwater City, Cypremort Point) would be appreciated. Thanks and tight lines.
