What time of year are you considering? For just bull reds on fly (I'm not a fly fisherman) I'd recommend late summer thru midfall. Delta marina, Joshua's Marina are good if you what to fish the westside, I catch way more bulls on the eastside. The passes off the river usually hold them year round. Venice Marine or Cypress cove for Venice is where I launch if fishing the downriver or barrier islands. The launch by the flag pole is where you would put in if fishing up on the eastside. All launches I mentioned are within 15 minutes of each other. Plenty of places to stay within a short drive of all of them.

I'd look at bonded bullets in the 160 gr., i'm a fan of the Accubonds. If set on something lighter, a Barns or similar designed bullet.
Of the chokes you already own, the IC should be an .665 constriction with the JH .660. Magblends are harder to predict then straight 6's or 7's . The only way to know is to run a round or two thru each and count pellet holes. I've had better luck with Indian Creeks in mine, but every gun is different. I doubt you will see a dramatic difference between them.

Being you've killed Easterns, why not head west after a Rio? Of the states mentioned, Kentucky would be my first choice.
Venice marina sells live shrimp.
From what I've seen 2013 is going to be good in SW Mississippi. We were covered up in jakes last spring.
